“Scotland has the best larder in the world” says Simon Kelman, seafood ace and head chef at Dunalastair Hotel Suites. He’s honed his craft in some of Scotland’s best kitchens from the age of 16, including stalwarts of the Edinburgh food scene Howies and InterContinental Edinburgh The George.
